Hondoras Finca El Matazano Whole Bean Coffee

Every now and then, a Central American offering defies the common nutty, chocolaty characteristics that we all love in our everyday drinkers from this part of the world. It's often the case that these outliers are processed by the pulped-natural--a.k.a honey--method. This method, which allows some of the fruit to remain on the seed while it dries, can elevate an ordinary coffee into the realm of the extraordinary. Or not! Sometimes they disappoint and the extra work that the farmer has undertaken doesn't pay off.

In the case of this limited offering from Alfonso Ventura's Finca El Matazano, the payoff is clear. The result in the cup is syrupy sweet, full in body and intensely aromatic. 

This single-farm lot is one of Alfonso Ventura's experiments in processing through his collaboration with the CAFESCOR wet mill in Corquín, Copan. This collaboration has opened new opportunities for Finca El Matazano to explore the potential of their coffees. We're delighted to feature Alfonso and CAFESCOR's work this Spring!
